Recessed lighting works well over a shower or bathtub. The light should be enclosed to prevent moisture from getting into the light. Also, you may want to consider using a light and vent fan combination in some restrooms. Some are cleverly designed so that you cannot even tell that a fan is there - all you see is the light.
If you are remodeling, you certainly want to think about the restroom lighting and the restroom fixtures at the same time. This way you will have matching colors and styles, and the one compliments the other giving you the great restroom you want.
